On our recent European road trip we travelled 1700 miles across Europe in our Mazda Bongo and needed to come up with some vegan food ideas that didn’t need refrigeration.
We did take a camping stove with us, but we were out on day trips most days, when we weren’t travelling to destinations, so we needed food ideas that needed no fridge and no stove.
I thought it was going to be really tricky to come up with enough snack ideas and meals that don’t need refrigeration or cooking, especially healthy ideas.

Nearly every time I go on holiday I take too many things. I’m very minimal at home with my décor and belongings and so on, yet when it comes to travel I am guilty of taking a bunch of clothing I never even wear. Not only is this wasting time packing and organising them, but it means I’m lugging around a stack of extra weight that I simply don’t need to.
I also really hate packing and even worse is unpacking when home. It’s a travel chore! So I really don’t want to waste any extra time packing and unpacking things I don’t even use. I’ve decided to make my packing for travel recently a lot more minimal and I will share tips in this blog post on how you can pack light for your next summer holiday.

If you’re staying in the UK for a holiday or short break then I have some clever advice for how to pack a bit lighter to make the car journey more spacious and comfortable. Going away with a baby or young children can be overwhelming when packing and you often feel like you need to take the entire contents of your house including the kitchen sink!
We’ve been there and travelled for only a few days with the kids, or when our eldest was born we travelled just with a baby, and the car was stuffed full of luggage literally bursting out of every seam – the boot, in-between seats, behind seats, in every foot well, on our laps! It was crazy.
